Before you can talk about any recipes with Jerk Chicken you need to decide on a Jerk seasoning/marinade. I originally tried Boston Jerk Seasoning but I didn't quite like it. I subsequently found Walkerswood Jerk Seasoning and I find that I really like it. Boston Jerk lists "hot peppers" in its ingredients while Walkerswood specifically lists Scotch Bonnet peppers, which may be the difference. Scotch Bonnets are the key to the heat and flavor in jerk seasoning.
Walkerswood is available at your local Publix in the same section as the other hot sauces. If you like jerk its really quite good.
