So on a Saturday afternoon I decided to take the Drive up to Western Boca to check out The Sybarite Pig; an interesting place with an aggressive, pork-centric menu. There's never any traffic on weekends this time of year, but it's still a pretty long trip for a sausage sandwich.
So you can imagine my horror when I saw the little handwritten note on the door that said that they wouldn't be opening until 4pm (it was 1:30pm at the time). I'd checked their website and facebook page before leaving so I didn't see a need for a backup plan; great, 25 miles and I'm standing there looking at the TGI Friday's across the street.
The story here was that their "lunch chef" left and they hadn't replaced her yet. Well I've been in business over 20 years, so let me tell you how this works: when an employee leaves or is fired, other people pick up the slack. If there are no other people that can do it, then the owner comes in early and works the shift himself. That's how it works in America, unless you're JoJo Parsons.
